I was feeling rather lazy last night… just didn’t feel like slaving away in front of the stove for an hour just so my hubby can inhale the dinner in 10 mins. So I just made an effortless baked chicken and veggies, which turned out really good π
1. Preheat the oven to about 325F
2. Grab a big bowl, and toss some chicken pieces (I used boneless and skinless chicken thighs) and veggies (I used carrots, cauliflower, tomatoes and onion) with some olive oil, minced garlic, sake (or white wine), salt and pepper.
3. Dump everything in an ovenproof dish, chuck in the oven, and just leave it for about an hour.
5 mins before an hour mark, toss some green salad with olive oil, lemon juice, salt and pepper π And you got yourself a healthy and nutritious dinner, and most importantly.. super easy π

Yeah, I’m having a really fun time experimenting in the kitchen π I bet it’ll be better with bone-in and skin-on chicken though π
